This salad is a creation from leftovers night. We had lots of vegetables on hand, but only a few pieces of different kinds of meat. One of which was, of course, pork chops. It’s a great salad because it’s just a little bit different then your normal chicken salad. It is had peppers and a boiled egg, instead of cucumbers and tomatoes. Dried onions and tortilla strips, instead of croutons, and sharp cheese. Which kinda makes it feel like a taco salad. It’s also really easy, quick to make, and it helps keep you from wasting food.
- 1-2 Leftover Pork Chops
- 4 Cups of Baby Spinach
- 1 Boiled Egg
- 1/4 of a Sliced Green and Red bell pepper
- 1/2 of a Carrot, peeled/grated
- 1/2 Cup of Dried Onions
- 1/2 Cup of Salad Sized Tortilla Strips
- 1/2 Cup of Sharp Cheddar Cheese.
- Chop, Mix, and Eat!
